Low Carb Granola Ice Cream

HighKey makes great low carb granola that is perfect for ice cream. It stays crunchy and tastes very close to the real thing. Vanilla ice cream is an obvious choice to pair with granola, but I highly recommend using Mexican vanilla rather than the typical bourbon vanilla from Madagascar. I also love this granola with apple pie flavoring, too.

Ingredients


Low Carb Philadelphia-style Ice Cream Base
2 tablespoons Nielsen-Massey Mexican Pure Vanilla Extract or 2 tablespoons Alpha Freezz Spicy Apple Pie
½ cup (62 g) HighKey Snacks Keto Granola

Directions

  1. Follow the instructions for the Low Carb Philadelphia-style Ice Cream Base. Add the flavoring. Cover and chill in the refrigerator for a few hours.
  2. Follow your ice cream maker’s directions. Add the granola while churning about one minute before the ice cream is ready.
