Low Carb Brownie Cake Batter Ice Cream

I posted a brownie ice cream using caramel flavoring and my homemade brownie recipe about five years ago. Now that I have access to other ice cream flavorings and “off the shelf” low carb products, it’s time for a refresh. Alpha Freezz offers a Brownie Cake Batter ice cream flavoring and a company called “Eat Me Guilt Free” sells flourless chocolate brownies we can use as a mix-in. Their brownies are okay as a snack but work incredibly well in ice cream.

Ingredients


Low Carb Sweet Cream Base
1-2 tablespoons Brownie Cake Batter Ice Cream Flavoring
2 packages Eat Me Guilt Free Flourless Brownie

Directions

  1. Cut up the brownies into 12 pieces each. Put them into an empty ice cream container and put into the freezer.
  2. Follow the instructions for the Low Carb Sweet Cream Base. Add the concentrate after the mix has cooled, if applicable. Cover and chill in the refrigerator for a few hours.
  3. Follow your ice cream maker’s directions for making ice cream. Add the brownie pieces into the ice cream maker approximately one minute before it’s done. Remove from the ice cream maker using a silicone spatula into the container. Freeze until solid.
