It’s been over five years since I published my first attempt at cookies and cream ice cream. I had to come up with my own recipe for the cookies and the filling. It doesn’t make sense in 2021 to DIY. Catalina Crunch makes incredibly good sandwich cookies in a variety of flavors. The vanilla cookies work great with yellow cake batter ice cream. I also did peanut butter cookies with peanut butter flavoring, but the first two were the stars of the show.
Ingredients
Low Carb Sweet Cream Base
1-2 tablespoons Alpha Freezz Cookies and Cream or Yellow Cake Batter flavoring
8 Catalina Crunch Keto Sandwich Cookies
Directions
- Break each cookies into four and add to an empty ice cream container and place it in the refrigerator.
- Follow the instructions for the Low Carb Sweet Cream Base. Add the flavoring after the mix has cooled, if applicable. Cover and chill in the refrigerator for a few hours.
- Follow your ice cream maker’s directions for making ice cream. Add the cookies to the ice cream maker 10 seconds before it’s complete. Remove from the ice cream maker using a silicone spatula into the container. Freeze until solid.
